100% hands on Ramen class (noodles, soups, & cook your own)

Join me with 1000s of others who took my class over the past 5 years! In this 100% hands-on 3-hour class, everyone will make your own custom Ramen from scratch (noodles, soup, & cook it), so you can recreate it at home after this 1 class!!
1. You will knead the dough for noodles first.
2. While it rests, I will serve you 4 different ramen (shoyu, miso, tonkotsu, tantan) to taste so you can decide what type of soup and noodles you want to make for your own Ramen. Also, I will talk about the history of Ramen, types, the difference in the region, traits, most updated Japanese trend.
3. I will teach you how to make Aji-Tama (eggs) and Chashu (Pork Belly).
4. I will show you how to make stocks and you will strain it.
5. You will roll out the dough and cut it to make your custom noodles.
6. You will make your own Kaeshi (soup base).
7. Last, you will cook your own Ramen using my milky white Tonkotsu Paitan stock or clear Chicken Chintan stock. Veggie stock available upon request.
You can put what you like from Chashu made with my AGED sauce, ground spicy pork, Aji-Tama, bean sprouts, scallions, Beni Shoga, Takana, Kikurage, corn, and butter.
I will provide the complete recipe.

I've been teaching how to make Ramen over 5 years and Sushi for 15 years, which was highlighted in Sunset magazine.
I'm originally from Yokohama, Japan. I opened the first izakaya in SF, Sozai in 2008 and Nombe in 2009, received Top 100 from SF Chronicle and was named Top 6 Izakaya in the US by Bon Appetit.

You'll learn how to make "Professional" Ramen in a spacious commercial kitchen w/ high heat burners and professional equipment. The kitchen can be cold or hot depending on the weather.
The Tasting/lecture and the dinner will be served in a separate dining area.
The building is located on Bernal Heights next to Barebottle Brewery in the residential area and the parking is difficult.
The door opens 15 min before the class starts.

What a fun and interesting experience this was. Mari was knowledgeable and friendly and made the experience of making ramen, great! It was great to get hands on experience making our own ramen and having the opportunity to taste a variety of ramen types. My teenager had an awesome time too. We would highly recommend this to anyone who loves ramen or wants to experience the Japanese food culture!

Mari's class was amazing! The structure was laid out very well with a mix of hands-on cooking, tasting and storytelling. I learned so much from her about the origin of ramen, different styles, and the amount of time and skill it takes to create a bowl of ramen. I left with a very full stomach, local recommendations, and recipes.

This was a great class! Although the room felt a little packed, I still felt very included. Tasting the different ramens was delicious. The tantanmen is my favorite. Mari's is honestly the best my boyfriend and I have ever tasted. It was informative about the background of ramen and its history. It's also hands on and interactive. It was good back and forth so you don't get bored. Making the noodles was fun as was learning about the bases. Cooking your ramen was face paced but in a fun way. The only negative was that I wish I would've bought her pork chasu and stock! I will be working hard to replicate. 😁

My boyfriend surprised me with a trip to SF for my birthday weekend and ramen cooking was one of the stops. Mari was really great and clearly had years of experience not only with ramen, but in the culinary industry in general. It was a bit disappointing that she had to depart halfway through and we had to finish the experience with her attaché, but he was great as well. Professional tips, go light on the soup ingredients! We got too greedy and it really took away from the finished product. Also, wear something you don’t mind getting a bit dirty.
