Victor's Way is something that has to be seen to be believed. I recommend not Googling images related to it as this will ruin the surprise. You MUST visit if you are driving through Roundwood to get to Laragh.

Great place for horse riding, mountain biking and archery.
An excellent golf course with the best views in Ireland (I may be a little biased however).

Getting Around
I haven't tried these bikes personally but it sounds like a great idea during the spring/summer. An app takes you along various routes through through the countryside.
