There are lots of hole in the wall Mexican Restaurants, which we thoroughly enjoy. But if you want your food to have a deeper, more complex and thoughtful depth of flavor, Adobe Grill (at the La Quinta Resort and Spa) is my #1 choice for Mexican. Fair Warning...it is a bit more expensive, but well worth it.
