Situado a espaldas de la catedral, en el recinto del antiguo alcázar musulmán, el almudín se remonta al siglo XIV, construido para almacenar el trigo, producto de primera necesidad cuyo aprovisionamiento, custodia y distribución estaba al cargo de la ciudad. Located behind the cathedral, in the grounds of the old Muslim fortress, the almudín dates back to the fourteenth century, built to store wheat, a staple product whose supply, custody and distribution was in charge of the city. El Almudín se construyó sobre el alcázar musulmán a principios del siglo XIV como lugar de almacenaje y venta de trigo. En origen tendría unas dimensiones más reducidas y se fue ampliando a lo largo de los siglos XV y XVI hasta adquirir el aspecto que hoy tiene. El primitivo edificio tendría un patio central a cielo abierto y fue a principios del siglo XVII cuando se incorporó la cubierta, dándole la imagen de planta basilical que tiene en la actualidad.
