We talked extensively about Altatto, a vegan and vegetarian bistro with a feminine touch in a recent review. An obligatory address for those looking for a completely green gastronomic experience. The tasting menus are carried out by the three chefs and owners Giulia, Cinzia and Sara who have made their dose of mess at Pietro Leemann's Joia and for some years have taken off in the world of vegetarian catering. More recently they inaugurated the bistro in the Greco area, a convivial place on the verge of pop-up - it is open only on Tuesdays and Wednesdays for dinner - with an urban design in shades of white and gray and illuminated by adjustable globules to shed light on the menu. The visual picture is completed by the essential furnishings of the metal tables to be shared with all the diners. Altatto's cuisine takes care of the rest of the senses which, as the name suggests, plays with hands, flavors, smells and textures. But it is above all the sense of surprise that is teased by the three young chefs, whose dishes speak of seasonality, rediscovered ingredients and fusion collaborations. In other words, every week at Altatto you will find something new, maybe even some fascinating stranger eating next to you, who knows. The only certain thing is the quality of vegetarian and vegan cuisine which, although sophisticated, does not resort to the tricks of the "usual" tricks of imitating omnivorous dishes but reinterprets the ingredients while respecting their naturalness.
